GR Downtown Market Fall Cooking Classes

October 14 – Digestive Health

  • Ginger & Garlic Roasted Soybeans – served over fresh avocado & tomato, garnished with cilantro and a hint of lime

  • Fattoush Salad – a Middle Eastern specialty - cucumbers, tomatoes, red onion, radish, lettuce and pita chips with a garlic lemon sumac dressing

  • Avocado & Tempeh Tacos with Crunchy Slaw – green onion, shredded cabbage, cilantro & lime juice slaw top this mouthwatering avocado & spiced tempeh taco

  • Kimchi – master the art of fermentation  as we make homemade kimchi – Nappa cabbage, carrots, green onion, Korean chili, garlic, ginger – you will get a jar to take home with you

 

November 18 – Bone Health

  • Roasted Red Pepper Hummus – you will never want to buy store bought again when you see how easy this is and how tasty – roasted red peppers, chickpeas, tahini, garlic, lemon juice

  • Butternut Squash Coconut Curry Soup – the perfect warm savory soup for Fall – butternut squash, apple, coconut milk and a hint of spices

  • Roasted Beet Salad with a Citrus Green Onion Dressing – packed with nutrients and so satisfying to the taste buds! - arugula, baby spinach, carrots, apple, pepitas, avocado topped with an orange lime cilantro green onion dressing

  • Ultimate Tostadas – pinto beans, collard greens, Mexican spiced tofu and topped with a Red Wine Cherry Guajillo Chile Reduction sauce that you will want to put over everything once you learn the recipe!

 

December 16 – Joint Heath

  • Balsamic Reduction Caper Bruschetta over Crostinis – so simple, yet so elegant in presentation and taste

  • Coconut Cream Red Lentil Soup – so easy to make, yet bursting full of great flavors and nutrients

  • Kale & Potato Curry – flavors of garlic, ginger, onions & Nepali spices

  • Cashew Cream Chickpea & Mushroom Curry – garlic, cilantro, tomatoes and lots of great worldly spices – this is a favorite dish to serve at a potluck
