Culinary Health:

A Doctor's & Chef's Prescription for Health in the Kitchen

You are invited to join Chef Elizabeth Suvedi from Culinary Expedition and Dr. Kristi Artz in the kitchen to create a plant powered, nutrient dense meal designed for optimal health.  Together we will explore the importance of nutrient rich foods and highlight techniques in the kitchen that can maximize these health benefits in your everyday meals.


The four course full dinner will include:


o   Appetizer: Garlic & Ginger Roasted Soybeans – roasted soybeans, garlic, ginger, lime, cilantro, tomato, avocado - discover the superior immune supporting properties of garlic and ginger


o   Salad:  Spinach & Arugula Salad with Citrus & Green Onion Salad Dressing – baby spinach, arugula, roasted & raw beets, apple, avocado, pepitas with a citrus, parsley, green onion dressing - gain a better understanding why leafy greens remain the pinnacle of nutrient dense foods


o   Soup:  Cauliflower Stew – cauliflower, hints of coconut, Swiss chard, raisins, Great Northern beans, carrots, tomato sauce, fresh parsley, basil, onion, garlic - discuss why cruciferous vegetables, such as cauliflower, have the power to prevent and treat cancer


o   Main Course: Albanian ‘Stuffed’ Eggplant and Brown Rice – roasted eggplant, bell peppers, tomatoes, mushrooms, onion, garlic, herbs served over brown rice - learn about the immune supporting phytochemicals found in mushrooms and why they are so beneficial to our health


The June cooking class is at a home on Lake Michigan in West Olive.  Address provided upon registration.




The June 4 cooking event is $75 per person.  Sign up soon as space is limited!


All participants will be required to  sign a Culinary Expedition Terms of Participation form prior to class. 


A few ingredient subsitutes may be made to adjust for seasonal produce.
